Asparagus Fritatta

Asparagus Fritatta

5 eggs or 8 egg whites

1/4 cup low fat milk

1/4 cup low fat or fat free shredded cheddar cheese

1/2 cup fresh asparagus cut into 1 inch pieces ( about 1/2 lb)

Salt and pepper to season/ taste


 

Directions:

  1. Preheat oven to 350. Coat a 9 inch glass pie plate with non stick cooking spray and set aside.
  2. In a medium bowl whisk together eggs, milk, cheese salt and pepper.  stir in asparagus and pour into pie plate.  Bake about 20 minutes or until set.  Let stand for about 5 minutes before slicing and serving.  Try adding more colorful vegetables like diced red and green peppers, adding in 1 cup raw spinach or cooked broccoli!
