Vegan Maple Orange Raisin Drops
These Vegan Maple Orange Raisin Drops are so flavorful, convenient and packed with nutrition. You can use as a breakfast meal or have a few for a dessert. I used up my left over sweet potatoes with oranges for this recipe but you can use just plain sweet potatoes if you want
2 scoops Vegan vanilla Protein
2/3 c orange sweet potatoes, or plain
1/2 c coconut flour
1/2 c millet flour
1/2 c Orange Juice
1/2 c unsweetened Almond milk
1/2 c pecans ground
1/4 c flax meal
1/4 c raisins- soak in hot water 10 minutes
2 T maple Syrup
1 T vanilla extract
1 T cinnamon
3/4 t salt
2 packets Stevia
zest of 1 large orange
Mix all dry ingredients together except for the pecans. Drain raisins and add the dry mix.
In a separate bowl mix together the sweet potatoes, orange juice, almond milk, vanilla, maple syrup and orange zest together.
Add this mixture to the dry ingredients, mix well. Using a cookie scooper, scoop and drop into the ground pecans, lightly roll. Place cookies on a cookie tray lined with wax paper. Place in the refrigerator to chill.
You can drizzle the tops with extra maple syrup for a better maple punch too. serve. enjoy.
TIP- if you don’t want to use millet flour replace it with 1/3 c coconut flour. you may need to adjust liquid a bit as coconut flour soaks up so much more liquid than other flours
