In all the hustle and bustle of the holidays did you catch that ABOUTTIME released a vegan brownie mix? Well, in case you forgot; they did!

OR If you haven’t had a chance to experiment with it yet; these truffles will be the perfect place to start.

Similar to the protein pancake mix, the vegan brownie mix is also just a “simply add water” mix. That’s correct; ¼ th cup of the mix requires only 2 tablespoons of water to make a chocolatey, gooey brownie. What you might not know is, since this mix is dairy-free and preservative free, it’s also a no-baking required mix. This means the batter is safe to enjoy and it serves as the inside filling to these decadent truffles below.

For these recipes you will want to use a double boiler or put together this make-shift one (which is how I did it) and parchment or wax paper.

Vegan Peppermint Mocha Truffles makes 6 truffles Vegan Brownie Truffles

1 cup carob chips

¼ cup ABOUTTIME vegan brownie mix

2 tbsp brewed coffee (room temperature)

1 tsp coconut oil

¼ tsp pure peppermint extract

¼ cup unsweetened coconut flakes

DIRECTIONS

Prepare vegan brownie mix according to directions, but replace water with the 2 tbsp of brewed coffee.

Using your hands, divide mix into 6 teaspoon-sized truffle balls and set aside on wax paper.

In a double boiler (or the make-shift one) add coconut oil, carob chips, and peppermint extract.

Use medium to low heat and stir until chips begin to melt into a smooth paste

Once chips are thoroughly melted turn off heat and using a toothpick drop truffle balls into melted chocolate.

Set on wax paper and sprinkle unsweetened coconut chips on top

Once all 6 truffles have been dipped place in refrigerator for 5-10 minutes until outer chocolate shell hardens

Vegan Chocolate Banana Nut Truffles makes 6 truffles Vegan Brownie Truffles

1 cup carob chips

1 tbsp nut butter of choice

¼ cup ABOUTTIME vegan brownie mix

1 tbsp water

¼ tsp pure almond extract

½ cup banana chips crushed

DIRECTIONS

Prepare vegan brownie mix according to directions.

Using your hands, divide mix into 6 teaspoon-sized truffle balls and set aside on wax paper.

In a double boiler (or the make-shift one) add 1 tbsp nut butter, 1 cup of Enjoy for life carob chips, and almond extract.

Use medium to low heat and stir until chips begin to melt into a smooth paste.

Once chips are thoroughly melted turn off heat and using a toothpick drop truffle balls into melted chocolate.

Set on wax paper and sprinkle crushed banana chips on top

Once all 6 truffles have been dipped place in refrigerator for 5-10 minutes until outer chocolate shell hardens


 

The possibilities for the different types of truffles you can make with this vegan brownie mix are endless. Experiment – have fun with them! They are perfect to keep in the fridge when the sweet tooth craving hits and you just want something small & sweet; or all 6 of them.
