Tomato Mango Salsa with Coconut


1 fresh mango, peeled and diced

12 large grape tomatoes, quartered and diced

1/4 white onion, diced

2 slices of Trader Joes Coconut Strips

3 cloves garlic minced

6 sprigs cilantro picked and minced

1/2 lemon, juiced

3 dashes salt

2 dashes cayenne pepper or 1/4 Jalapeno, minced

Mix all items together, enjoy with homemade low carb cinnamon triangles or try on chicken or pork
