Sweet Potato Breakfast Bars
With only two simple ingredients, these “bars” are easy to make and heat up for a breakfast on the go. Allow your taste buds to get a bit of something sweet from the natural sweet potato base.

Yields: 6 bars
• 1 ½ cups diced, cooked sweet potato
• 4 eggs
• Dash of cinnamon (optional but recommended)

• Set oven to 350 and lightly grease an 8×8 dish
• Cooked sweet potato and peel
• Add all ingredients to a blender or food processor and mix until creamy consistency is made
• Pour mixture into baking dish and cook for 35-40 minutes
• Allow bars to cool and cut into 6 equal bars
