Sweet Potato and Kale

This Sweet Potato and Kale recipe is so easy and tastes amazing. Try mixing in any type of veggie. A great way to get them into individuals who don’t like VEGGIES!!!

1 large sweet potato

1/2 c Kale shredded

1/4 c vegetable stock

2 T coconut spread

1 T dried cranberries

a dash of garlic and salt- OPTIONAL

If you use fresh kale,  just boil water, blanch it for a couple minutes remove from water and drain, set aside, if you choose to use fresh frozen, simply thaw and drain. Bake your sweet potato until soft, allow to cool slightly so you can handle without being burned. While baking slowly heat your vegetable stock in a small pot. Peel sweet potato, place into a food processor with the dried cranberries. Blend until combined and berries are mashed throughout. Transfer to a small mixing bowl. Add the warm vegetable stock, coconut butter and seasonings, stir. Fold in the kale and enjoy! Yields 2 servings
