Sunflower Seed and Coconut Crackers
These Sunflower Seed and Coconut Crackers are great crackers for dips, cheese or to snack on by themselves
1 c sunflower seeds
1/2 c unsweetened coconut flakes
1 scoop About Time unflavored protein powder
1/3 c water
1/8 t Himalayan sea salt
1/16 t pepper
1/8 t paprika
1/8 t onion powder
Preheat your oven to 300 degrees. Spray a baking sheet well with non stick spray. Blend sunflower seeds and coconut in a food processor, not until smooth but well blended. Add protein and water, blend in. Add seasonings, pulse a few times.
Place dough onto the tray and roll out thin with wax paper on top. lightly sprinkle with a tad bit of Himalayan sea salt. gently score the shape of crackers you want. Bake about 20 minutes. Rest a few minutes, remove from tray using a stainless steel spatula. (mine stuck a little I had to use a bit of elbow grease)
if bottom is slightly damp, turn over on tray and place in oven for a few minutes. remove and cool. Enjoy. Yields 6 servings
