Strawberry Lemon Poppyseed Tarts

1/4 c poppy seeds

1/4 c almond meal

1/4 t baking powder

1/8 t salt

1 scoop About Time birthday cake protein

1/4 c Spelt flour

2 packets Stevia

zest of 1 lemon

Mix together in a bowl, then in a separate bowl mix together the following:

1/4 c ricotta cheese

1/2 banana

1/4 avocado

1/2 c unsweetened Almond coconut milk

1 t vanilla extract

Juice of 1 lemon

1 T melted coconut oil

Add wet to dry and blend together

9 strawberry slices for top of raw cakes

Filling:

1/4 c Greek Cream Cheese

11/2 t vanilla extract

1 packet Stevia

1 strawberry mashed

1 T chopped cranberries

Mix together to make filling

Preheat oven to 350degrees. Spoon batter into mini tarts pans or small tart pans. Top with a strawberry slice. Bake 19-21 minutes.  Recipe yielded 6 mini tarts(2 inches wide)  and 3 small tart pans (5 inches wide). remove and cool on a wire rack. Cut tarts length wise and fill with cream frosting. Place cake lid back on top.
