Strawberry Coconut Whipped Cream Pie with Berries

Crust:

1/3 c almond meal

1/4 c flax meal

1 t cinnamon

 

Whipped Cream Base:

1 can full fat Coconut milk

1 c Plain Greek Yogurt

2 T vanilla extract

4 packets Stevia

 

Pie Fillers:

1/2 pint blueberries

10 large strawberries

2 scoops About Time Strawberry whey protein

1/4 c unsweetened coconut

2 T unsweetened coconut

 

You will need 1 pie dish. Mix the crust ingredients together and place in your pie dish. Spread the mixture around to cover the bottom. Place coconut milk, vanilla and stevia in a large bowl. Using either a stand mixer or using a hand mixer, whip the coconut milk mixture to a whipped cream with soft peaks. Once achieved, slowly add the Greek yogurt 1 T at a time to keep your whipped cream consistency. When finished, place whipped cream in the refrigerator.

Wash and dry your berries. Remove the stems of the Strawberries too. Slice Strawberries into thirds. Remove whipped cream from the refrigerator, place 2 cups of the mixture into another bowl, add the strawberry protein and fold in. Add the berries and the 1/4 c coconut and fold in. Gently pour the mixture into your crust and spread even.  Top the pie with the 2 T of coconut. Place your pie in the freezer for 20-30 minutes to set up. Slice and enjoy.

TIP* This pie can stay in the freezer, once hard enough, cover with saran wrap until ready to use. You will just need to let the pie set out a bit to cut then thaw slightly to eat and enjoy
