Strawberry Coconut Cookies with Vegan Chocolate Buttercream Frosting

Oh MY, these Strawberry Coconut Cookies with Vegan Chocolate Buttercream Frosting hits the spot when your in the mood for a healthy snack or after dinner treat

 

Strawberry Coconut cookies with Vegan Chocolate buttercream Frosting

 Cookies:

1/4 c Unsweetened Almond Milk

1/4 c Coconut flour

1/4 c Shredded coconut

1 scoop About Time Strawberry whey isolate protein

1 T Coconut oil, melted

1 t Vanilla extract

1/4 t Baking powder

1/4 t salt

1 Stevia packet

 

Preheat oven to 350 degrees. Lightly spray a light colored baking sheet with non stick spray. In a medium bowl, mix together, coconut flour, coconut, protein, stevia, salt, and baking powder. Wash strawberries and remove tops. Place in a small bowl and put into the microwave for 15 seconds. Remove and easily mash strawberries with a fork. Add melted coconut oil to dry mix and stir. Add mashed strawberries and vanilla extract and stir. Add almond milk and stir. Using a small cookie scoop, scoop out batter onto baking sheet,(makes 14 cookies) when finished gently press cookies down to about 1/4 inch or so. bake about 8 minutes. remove from tray and completely cool before frosting

 

Frosting:

2 T Coconut Spread, I used the Olivio Brand

2 squares dark chocolate

1/2 scoop About Time VE chocolate

 

In a small sauce pan place the coconut spread and chocolate squares. Apply low heat and stir until product is completely melted. Place pot into the refrigerator until completely cooled. Scrape from the pan and place into a small bowl. Using a hand mixer beat mixture into soft peaks.

*TIP- you can leave the butter cream just like this and use if you want (this will be a better shelf stable icing)

Add the 1/2 scoop of vegan protein and blend in

*TIP- you can use cocoa powder instead of protein

Frost the cookies and let sit to dry. The added protein causes the frosting to stay moist and not completely dry, you can place these into the refrigerator for it to harden if you need to travel with these

 

Try Variations of this icing, using cacao or white chocolate or almond butter really it can be endless
