Sloppy Jo with Sweet Potato Bun
This Sloppy Jo with Sweet Potato Bun is a great lunch on a cooler day, will satisfy any cravings
BBQ Sauce:
1 1/4 c stewed tomatoes
1/3 c onion
1/3 c Date Molasses- (dates mixed with water)
2 T lemon juice
2 T white vinegar
2 T Worcestershire Sauce
1 t dry mustard
1/2 t red pepper flakes
1/4 t garlic powder
a few dashes salt and pepper
Place all items into a food processor and blend. Pour sauce into a sauce pot over medium high heat bring the sauce to a boil. reduce heat to a low simmer and cook until your desired thickness
Sloppy Jo:
1 lb Lean Ground beef 95%
Above BBQ sauce
1/3 c diced peppers
1/4 c diced onions
Brown your ground beef, drain (I had about 2 cups cooked meat when I was done). Add your peppers and onions, saute until soft. Add your BBQ sauce and heat until hot.
1 serving filling is equivalent to:

Sweet Potato Buns:
I followed my Spaghetti Squash Bun recipe. I substituted Sweet potato for the spaghetti squash and cut the amount by 25% (example if regular recipe calls for 1 c- use 3/4 c)
1 added 1/2 t baking powder
1 serving sweet potato bun is equivalent to:

yields 4 buns
