This Roasted Spaghetti Squash Pizza Casserole takes the cake so to say if you are craving Pizza! Completely satisfying and a simple recipe to prepare for a lower carb meal.

Roasted spaghetti squash pizza casserole

 

1 small spaghetti squash

Cut the squash in half. Remove the seeds. Place halves open side down on a tray and roast in the oven for 50 minutes or until soft and done. Allow squash to cool. Mine sat for 2 days until I could get to them. You can use right away once cool enough to handle. Scrape meat from the walls of the squash, place on a well sprayed baking sheet.  Squash should yield about 1 1/4 to 1 1/2 cups of meat.

1 small red pepper

1 small yellow pepper

1 large sweet potato

8 – 10 florets of fresh cauliflower (Above 4 items = 2 cups all together)

1 T coconut oil

garlic powder

onion powder

salt

pepper

oregano

Preheat your oven to 400 degrees. Quarter your peppers, remove seeds and ribs. Peel and slice your sweet potato in half. Slice each half into 1/4 inch slices. Slice the cauliflower florets in half. Place all these items on a well sprayed baking sheet. drizzle with melted coconut oil. You don’t need a ton, just be sure each piece gets a little so they don’t dry out. I then literally shook each spice container over all the vegetables. Sorry, I didn’t really measure that out. Place these items and the tray of spaghetti squash into the oven and roast until vegetables are browned and soft. Keep an eye on the squash. You want it to dry out some as squash is so watery. don’t burn it or have it become to crispy, you may want to toss it a little while it dries out some. This should still be soft when it’s done. Remove items from the oven and set aside. Squash can be set into a small colander to remove any other liquid it may have. all veggies should be split into 2 piles

Have homemade sauce or what ever red sauce you are going to use. This can be cold. Also grab some Parmesan cheese

Grab a bread loaf pan, spray well with non stick spray. Place a little sauce in the bottom, sprinkle with Parmesan cheese. Add a layer of squash, then sweet potatoes, then peppers, then cauliflower. Cover with sauce, cheese, squash, last of the sweet potatoes, peppers cauliflower then sauce and cheese. Bake at 400 degrees for 22-24 minutes. Remove from oven. Tilt the pan to the side to see if any more water is in the bottom, if so drain by tilting pan and pouring it out. Let product sit on a wire rack for 5-7 minutes. cut into 3 portions, enjoy.
