Quinoa Lentil and Kale Soup

This Quinoa Lentil and Kale Soup is a great way to stay warm. A protein packed snack or lunch that will satisfy you

6 c chicken stock

1 c Kale

2/3 c red lentils

2/3 c red quinoa

6 scallions- slivered

In a large pot place the chicken stock and scallions. Bring to a boil then reduce to a simmer. Add the lentil and quinoa. Cook for about 25-30 minutes. Add the Kale and cook until heated well throughout ( about another 10-15 minutes) This soup is really simple and all about tasting the ingredients used. The broth will grab the onion flavor from the scallions and tastes fresh. You can add additional items if you want. I use this recipe as a great 10 am or 3 pm snack i can drink out of a coffee cup while at work. Enjoy
