Quinoa Hummus and Chicken Pizza

Quinoa and Hummus pizza

Crust:

1 bag Rolands Mediterranean Gluten free Quinoa

2 t parm cheese

Prepare quinoa according to bag instructions. preheat oven to 400 degrees

Place into a bowl and mix with 2 t parmesan cheese

Scoop 6 piles onto a wax paper lined cookie sheet (about 1/4 cup each)

wet your hands and pat out piles into circles and flatten to 1/4 to 1/8 inch thick.

bake for 15 minutes- turn oven to broil when crusts are finished and removed from oven

Toppings:

3 sauteed Chicken tenderloins chopped

6 T olive hummus

1/2 cup black beans slightly chopped

1 oz shredded carrots

dash of cayenne pepper

2T parmesan cheese

Directions:

mix chicken, black beans, carrots and cayenne pepper together in a bowl.

Spread 1 T hummus on each pizza crust. Top with 1/6 of chicken mixture. top with 1 t of parmesan cheese. broil for 1-2 minutes.
