Quinoa and Vegetables


2 c chicken stock

1 c quinoa

place in a sauce pan and cook according to directions on bag, cook until soft

1 c brussell sprouts, halved

1/2 c celery diced

1/2 c red pepper, thin strips

1/2 sweet onion sliced into strips

2 slices bacon, diced

2 cloves garlic, chopped

2 T coconut oil

While quinoa is cooking, heat oil in large skillet. Add onion and garlic. cook 4-5 minutes. Add remaining vegetables, cook another 5 minutes or until you reached desired doneness. Add vegetables to quinoa , toss and serve
