Pumpkin Raisin Spice Cake

A great way to start your morning off throughout Fall and Winter. This Pumpkin Raisin Spice Cake is moist, flavorful and completely satisfying, great as a dessert too

Pumpkin Raisin Spice Cake


1 c unsweetened almond milk

2 scoops About Time Pumpkin Spice Whey Protein Isolate

2/3 c unsweetened coconut- separate in half

1/2 c raisins

1/2 c apple cider

1/3 c coconut flour

1/3 c almond flour

1/3 c almond butter

1/3 c pumpkin

3 T coconut oil- measure after melting

2 T Olivio Brand coconut spread

2 T flax Meal

1 1/2 T pumpkin pie spice

1 t baking powder

1 t baking soda

4 stevia packets

Preheat your oven to 350 degrees. Spray a 11 x 7 pan with non stick spray

In a large bowl mix together the almond butter, coconut oil, coconut spread and pumpkin. Add the cider and almond milk, mix well.

In a separate bowl add all the other ingredients except for 1/2 of the coconut and blend well. Add the dry ingredients to the wet ingredients, stir until combined. Pour into your well sprayed pan. Bake for 18-20 minutes. Allow to cool till warm, cut and serve.

TIP* try serving this with cinnamon swirl coconut butter, YUM

( cinnamon swirl protein added to coconut butter)
