Pumpkin Basil Squares

These Pumpkin Basil Squares are moist and oh so good with adding the basil. A nice twist on a seasonal favorite food.

Pumpkin Basil Squares

 

1 c garbanzo bean flour

3/4 c pumpkin

2 scoops pumpkin spice whey isolate protein powder

1/2 c molasses

1/2 c walnuts- small pieces

1/2 c unsweetened applesauce

3 T flax meal

2 T dried basil

2 T coconut oil- (Or butter, coconut spread etc)

1 T Stevia

2 t cinnamon

1 t nutmeg

1 t pure vanilla extract

1 t baking powder

1/2 t salt

1/2 t baking soda

 

Preheat your oven to 350 degrees. Spray an 8×8 pan with non stick spray well.

In a medium sized bowl mix together the molasses, vanilla, applesauce and pumpkin, set aside

In another bowl mix together the remaining ingredients well.

Add the dry to the wet and stir to make your batter. Pour into your sprayed pan, smooth out to even. Bake for 30 minutes or until cake is cooked completely in the center. (do not overcook, keep in mind carryover cooking) remove from oven and cool.

Slice into squares or into bread slices, try serving with coconut spread or applesauce or plain by itself
