PROTEIN CUT OUT COOKIES

1/2 cup flour of choice (not coconut flour- if you choose this you need to use about 2.5 T – This particular recipe was NOT tested using coconut flour. Not sure of the outcome)

1 scoop vanilla About Time protein

10 packets Truvia (or Stevia equivalent)

2 to 2 1/2 T unsweetened almond milk

2 T coconut oil- ( or earth balance butter)

1 t vanilla extract

1/4 t baking powder

1/4 t salt

1/4 t baking soda

Blend your flour, protein powder, baking powder , baking soda, sugar and salt together. Gently melt the coconut oil either in the microwave or on the stove top. In a separate bowl, add the vanilla extract and 2 T almond milk to the coconut oil, whisk together.  Add these wet ingredients to your dry ingredients. Work the items together well. If your mixture is still crumbly add the other 1/2 T of almond milk. (keep in mind, you can add liquids in, but you can’t take them out, so go slow :) ) When the dough comes together, form into a ball, Wrap it well in plastic wrap, place on a plate and chill in your refrigerator for an hour.

When ready, pre heat your oven to 325 degrees. I sprayed my counter top with non stick spray then placed wax paper on top so it didn’t move. ( If you have non slip bendable mats- you can use these too. Just something bendable so you can easily remove cookies) Once completed, gently sprayed the top of the wax paper plus a light colored cookie sheet, set cookie sheet aside. Using a rolling pin, roll out your dough to 1/4 inch thickness, cut out cookies with your favorite shapes of cookie cutters. If the dough is sticking to the rolling pin, you can gently spray the pin with non stick spray. Place cookies about 1/8 to 1/4 inch apart on the cookie tray to allow for even cooing and browning. Re-work all dough trimmings until all dough is made into cookies. This batch yielded 12 cookies. Bake 8 minutes, allow to rest on the cookie sheet for no more than 1 minute. Transfer to a cooling rack to cool completely before icing. Don’t forget to check out our natural icings- link above. ENJOY
