Pistachio Cranberry Coconut Protein Bar

An awesome way to begin your day or eat in between meals as snacks, this Pistachio Cranberry Coconut Protein Bar can be cut into cookies too! Great fall flavors to tempt your tastebuds

Pistachio Cranberry Coconut Protein Bar

 

1/3 c pistachios

1/4 c cranberries, dried

1/4 c unsweetened coconut

1 scoop About Time pumpkin Spice whey protein isolate (can use vanilla, birthday cake or cinnamon swirl too!)

1 T honey

1 T pure vanilla extract

1 t cinnamon

Place the pistachios, coconut, vanilla extract  and cranberries into your food processor, blend until a fine ground. Add the honey, protein and cinnamon, bl;end until a fine ground and moist. Place mixture into a small mixing bowl, begin to knead with your hands to form a ball. Roll dough out on a sheet of wax paper or parchment paper

You can either make these into bars or use cookie cutters and cut into shapes. I used mini cookie cutters, rolled it a little more than 1/4 inch thick. I made 18 cookies (3 servings). Or recipe will make 3 bars (3 servings)
