Peanut Butter Mousse + Pancakes

I can’t believe it, but summer has come and is on it’s way out. We need to start thinking about healthy but easy and TASTY recipes to get our kids out the door each morning. we have 2 simple but yummy ideas for you: Peanut Butter Mousse + Pancakes

Vegan Peanut Butter Mousse
-1 scoop vanilla vegan about time protein powder
-2 Tbsp PB2 or any nut butter of your choice
-1 tsp Chia seeds
-water to desired consistency if you use a dry peanut flour like PB2

Directions:
-mix all ingredients together and let chill in the refrigerator until firm and chia seeds have absorbed the water (typically overnight)

Peanut Butter Protein Pancakes
-1 scoop vanilla vegan about time protein powder
-2 egg whites
-1/4 c unsweetened almond milk
-cinnamon to taste
-peanut butter to taste (or use for drizzling on pancakes)
-blueberries or your favorite fruit topping

Directions:
-mix all ingredients (except for peanut butter and blueberries) together and pour batter into a greased skillet.
-makes one large pancake.
-drizzle with peanut butter and blueberries

 

Try taking these recipes and swapping out some of your favorite ingredients. Maybe pumpkin instead of peanut butter or chocolate protein instead of vanilla. There’s nothing more fun than mastering a simple recipe than building on it to make it your own!
