No bake vegan carrot cake or carrot cake smoothie

no bake Carrot cake balls, or bars:

2 oz dates

1/2 c pecans

1 scoop Vanilla About Time VE protein

8-10 short cut carrots

8 strands lemon zest

1/2 t cinnamon

1/8 t ginger

1/4 t salt

2 T unsweetened coconut

Chop dates and place in the food processor until they break down and come together in a ball. Remove from processor, set aside. Add carrots to processor, pulse until they break down. Add nuts, Pulse until they break down. Add remaining ingredients except coconut and protein and pulse to mix together. Add dates to this mix, pulse until it mixes. add protein, pulse until they mix together. Place mixture into a bowl, knead dough with your hand until it comes together. Make balls with the dough then roll into the unsweetened coconut. Chill in the refrigerator about 15 minutes. Or you can press the mixture in a small pan and make 6 breakfast bars, top the bars with the coconut and press it in slightly. Chill in the refrigerator about 15 minutes. Cut and serve

1 serving is equivalent to:

Carbs-1

Fats-1.5

Protein-1

 

Vegan Carrot cake smoothie:

8 oz unsweetened almond milk

1 scoop About Time VE vanilla protein

4 shortcut carrots

1 T pecans

1 T raisins(soak for 8 minutes in hot water, then drain) or dates

1 T unsweetened coconut

4 strands lemon zest

1/2 t cinnamon

dash of ginger

4 ice cubes

Place all items into a blender, blend, enjoy
