No Added Sugar Blueberry Cheesecake

This No Added Sugar Blueberry Cheesecake is super simple and tastes quite good. No one will believe it’s only 6 ingredients and completely guilt free to eat

Crust:

3/4 c almond flour

 

Filling:

1 c fresh blueberries + 1/2 fresh blueberries

4 oz Greek cream cheese

2/3 c plain Greek yogurt

2 scoops About Time Birthday Cake whey isolate protein

1 T vanilla extract

DO NOT PREHEAT OVEN.

Cream the cream cheese and yogurt together. Add the 1 c blueberries, protein and vanilla. Blend well.

Spray a spring form pan well with non stick spray. Place almond flour in bottom of pan, spread evenly. Top with cream cheese filling. Drop the 1/2 c blueberries around the top of filling. Place on a baking sheet with 1/3 c water on tray. Place in the oven, turn on to 325 degrees, put timer on 40 minutes. When done, remove from oven, run knife around outer edge let sit till cool. Place in refrigerator until ready to eat

If you want a larger cake, double the recipe leaving the crust the same. Try using different fruits too! or adding lemon, orange or lime zest, or different extracts, cocoa powder and chocolate protein to make a chocolate cheesecake possibly with raspberries. I can go on and on :)

TIP*- I used fresh blueberries. I am not sure how frozen slacked out blueberries will work, I am sure the cake will be “More Blue” if used. I also think the ones you “drop in” if they are still frozen they will leave a water ring around them possibly.

As summer fades away and the berries are no longer sweet, you may need to adjust the sweetness with Stevia. Yields 8 servings
