Memorial Day kicks off the summer picnic season and that means cookouts and lots of fun with family and friends. But how do you stay on track with your fitness goals when there are burgers on the grill, and tempting desserts?!
We put together some healthy alternatives for you to enjoy picnics and still stay healthy.

American Flag Fruit Skewers

Okay, so this may not be the greatest alternative to any traditional picnic recipes, but this is cute and festive and everyone at the picnic is going to love this!
Ingredients:
  • I pint fresh strawberries, halved or quartered
  • 1 cup fresh blueberries
  • 4-5 bananas, cut into 1 inch slices (soaked in lemon juice)
  • Wooden skewers
Directions:
  1. To create the American flag, thread about 6 blueberries on 5 of the skewers, followed by strawberry and banana pieces. Start with a banana slice and end with strawberry slice so that they are each even.
  2. On 5-7 additional skewers, alternate the bananas and strawberries. Make sure to align the fruit on the skewers to create the “stripes” of the flag.
  3. Arrange the skewers on a platter to resemble an American flag.

*the amount of fruit & skewers depends on how big you would like your flag to be. Feel free to add more ingredients to create a larger flag.

 

Tomato Avocado Mozzarella Salad


Salad Ingredients:
  • 1 pound (4 cups) red or yellow cherry tomatoes, halved
  • 2 avocados, diced.
  • 8 ounces small fresh mozzarella cheese balls
  • 1/2 cup fresh basil, chopped
Dressing Ingredients:
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 3 tbsp. honey or agave nectar
  • Salt to taste
Directions:
  1. In a large bowl, combine all salad ingredients except mozzarella cheese balls.
  2. In a small bowl, combine all dressing ingredients and whisk until blended.
  3. Add the salad dressing to the large bowl and sprinkle with a small amount of salt and toss to combine.
  4. Add mozzarella cheese balls before serving.
  5. Enjoy!

Salmon Quinoa Burgers

Super healthy burger alternative that is packed with protein!
Burger Ingredients:
  • 16 ox wild salmon fillet, skin removed
  • 1 tsp. olive oil
  • 1/3 cup shallots
  • 1 cup kale, chopped
  • 3/4 cup cooked quinoa
  • 2 tbsp. Dijon mustard
  • 1/2 tsp. old bay
  • 1 large egg, beaten
  • Salt and pepper to taste
Salad ingredients:
  • 2 & 1/2 tbsp. olive oil
  • 2 & 1/2 tbsp. champagne vinegar
  • 2 tbsp. minced shallots
  • 1 & 1/4 tsp. Dijon mustard
  • 10 lose cups baby arugula or mixed greens
  • 1 large pink grapefruit, peeled and diced.
  • Salt and pepper to taste
Directions:
  1. In a small bowl, whisk the olive oil, vinegar, shallots, Dijon, salt and pepper.
  2. Cut approx. a 4 oz. piece of salmon and place into a food processor or chopper to finely chop. This will help hold the burgers together.
  3. With a knife, finely chop the remaining salmon and then transfer to a large mixing bowl.
  4. Heat a large nonstick skillet over medium heat, add the oil and sauté shallots and kale. Season with salt and pepper and cook over medium heat until wilted and tender, about 4 to 5 minutes.
  5. In the large mixing bowl set aside with salmon, add the quinoa, Dijon mustard, old may, and egg.
  6. Mix to combine and then form into 5 patties, about 1/2 cup each.
  7. Lightly heat nonstick grill pan or skillet over medium heat. When hot spray with oil and then add the salmon patties.
  8. Cook 4-5 minutes or until cooked through.
  9. Toss the dressing with the arugula or mixed greens and grapefruit. Divide the salad onto plates.
  10. Top each salad with salmon burger and enjoy!

Vegan Brownies

Ingredients:
Directions:
  1. Mix all items together.
  2. Pour batter into Place in 9×9 greased pan.
  3. Bake at 350 degrees until complete. Around 15 to 20 minutes.
  4. Allow to cool, slice, and enjoy!

 

Sugar Free Lemonade

Ingredients:
  • 2/3 cup lemon juice (from about 10 large lemons)
  • 7 cups water
  • 1 tsp. stevia extract
  • Fresh strawberries
  • Fresh blueberries
  • Lemon slices
  • Ice for serving
  • Fresh mint for garnish
Directions:
  • In a large pitcher, combine lemon juice and stevia extract. Add water and stir.
  • To serve: fill glasses with ice about 2/3 full. Top with berries and lemon slices. Pour lemonade to fill glasses.
  • Garnish with mint and enjoy!
