Oh my these Marscapone Date Thumbprint Cookies are are soft, sweet and delightful! They are quick and easy to prepare, but look like you spent the entire day baking.

Marscapone Date Thumbprint Cookies

 

2/3 c mashed dates- Puree in processor or buy paste, then measure out

2/3 c marscapone cheese (I bought a small container, this was perfect for this entire recipe, batter plus filling)

4 scoops About Time Vanilla Whey Isolate

1 1/2 t cinnamon

3/4 c unsweetened coconut, shredded

 

ICING:

remainder of marscapone cheese

1 T honey

 

These are a simple no bake cookie that will please anyone who tries them. Keep the recipe handy as they will be asking for it.

Simply, chip and place dates in a food processor, Blend until smooth. Once completed, measure out 2/3 c of date paste and place in a medium size bowl. Or you can simply buy date paste and skip this part completely. Measure out 2/3 c marscapone cheese and add to the date paste. Mix the two items together. Add the cinnamon and fold into your batter. Then add your About Time Vanilla whey protein 1 scoop at a time and blend into the batter until all 4 scoops are in. Place the coconut into a small mixing bowl by itself.

Using a small cookie scoop, scoop batter and drop into the coconut. Be sure to remove the dough ball from the scooper with your other hand so no little pieces of dough fall into the coconut. Roll the dough into the coconut to adhere it to the cookie, roll into a ball shape. Place them on a wax paper lined cookie sheet.  Dough makes 25 cookies

Once completed, use your thumb to gently press the center of each cookie to make the “well” in the center of each cookie.

Make your icing right in the marscapone cheese container. Add 1 T honey to the remaining amount of cheese and mix until smooth. Using a spoon, add just a little to each cookie and use the tip of the spoon to smooth it out. You will have just enough to fill al 25 cookies.

Place the cookie tray into the refrigerator for 15 minutes to chill cookies,then serve. They can be chilled longer or kept in the refrigerator for days, just be sure to cover them with saran wrap once the first 15 minutes have passed. (this allows the icing to harden so it doesn’t stick to the saran wrap)
