Macadamia Mango Quinoa Summer Salad

(Vegan/Vegetarian)

 

Ingredients: 

1 large mango, cubed

½ large avocado, diced

1/4 cup macadamia nuts, roasted/salted

1 cup cooked quinoa, allowed to cool

6 cups fresh arugula or boston bibb

 

Dressing:

 

1/4 cup lemon juice

2 Tbsp apple cider vinegar

2 tbsp macadamia nut oil

1 Tbsp Dijon mustard

1 tsp agave syrup

Dash pepper and garlic powder

 

Directions:

In medium bowl, whisk together all the ingredients for the dressing. Toss the avocado, mango, and macadamia nuts into the dressing mixture and let soak for a few minutes. When ready to serve, top the greens with the fruit/quinoa and dressing mixture. Serve with fresh ground pepper on top.

For a non-vegetarian option and added protein, try topping each plate with grilled steak or chicken
