Lentil and Swiss Chard Soup
This Lentil and Swiss Chard Soup is a simple and easy meal to make with a burst of flavor.
2 c chicken stock
3/4 c fresh chard slivered, ribs removed
2/3 c red lentils (or color of your choice)
1/4 c celery, diced
1/4 c onions, diced
2 T sliced scallions
2 T coconut oil
1 T fresh parsley, minced
In a medium sauce pot melt the coconut oil. Add the celery and onion and cook until lightly browned. Add the lentils and the chicken stock. Cook for 20 minutes. Add 1 T scallions cook and additional 5 minutes. Add the swiss chard and cook an additional 10 minutes. lentils should still have a little texture to them, I am not a fan of them being over cooked. remove soup from stovetop. Add the parsley and remaining scallions, give it a stir. divide between two bowls, top with a nutritional yeast crisp, ENJOY
