In Season Eats – Start Fresh Salads

January means we get to wipe the slate clean and start fresh! A brand new year with new resolutions, new aspirations, and new goals to conquer!

Each January I usually set goals for each area in my life that is important to me, such as my career, my marriage, family, health/fitness, and travel! I consider health and fitness a huge area of importance because in order to live a long life, you have to take care of that bod of yours inside and out!

So now that the holiday festivities are over, it’s time to get back on track and start making healthier decisions. The holidays are hands down one of the toughest times of the year!  If you fell off the healthy bandwagon and gave in to a few more Christmas cookies than you had planned, don’t beat yourself up about it! Just get back on the healthy train and start the year off right!

A few of my absolute favorite fruits and veggies like grapefruit and kale are harvested in January, making for some fun healthy and fresh salads! That’s right, not your typical boring old bland salads, but some exciting and creative ways to get your greens in while eating what’s in season now! Here are a few of my go to salads, great for starter salads and even entrée salads.

Spinach Grapefruit Avocado Salad serves 6

Start Fresh

Ingredients:

  •       2 Bags Spinach
  •       2 Grapefruits, sliced
  •       1 Avocado
  •       2 TBS Olive oil
  •       1 TBS Grapefruit Juice
  •       1 TBS Champagne Vinegar
  •       Pink Himalayan Sea Salt, to taste
  •       Crushed Black Pepper, to taste

Directions:

Mix spinach, grapefruits, and avocado in a bowl. In a separate small bowl, mix together olive oil, grapefruit juice, and champagne vinegar. Pour dressing over salad and sprinkle with pink Himalayan sea salt and crushed black pepper, to taste.  Enjoy!

Warm Kale Quinoa Salad serves 6 start fresh

Ingredients:

  •       2 Bags Kale, trimmed and cut
  •       1 TBS Olive Oil
  •       1 Cup Quinoa, cooked
  •       6 Pearl Tomatoes, quartered
  •       24 Oz Chicken Breast
  •       Mrs. Dash Chicken Seasoning, to taste
  •       Pink Himalayan Sea Salt, to taste
  •       Crushed Black Pepper, to taste
  •       Crushed Red Pepper Flakes, to taste

Directions:

Sprinkle chicken breast with Mrs. Dash chicken seasoning and cook on a skillet over medium heat. In a separate large skillet, sauté kale in olive oil, sprinkle with pink Himalayan sea salt, crushed black pepper, and red pepper flakes. Let kale cook down a bit, then add tomatoes. Let cook for a few minutes, then add quinoa and grilled chicken and combine well. Turn off heat and serve warm. Enjoy!


 

The Spinach Grapefruit Avocado Salad is a perfect starter salad and great for entertaining. The Warm Quinoa Kale Salad with grilled chicken is a hearty and healthy main course! Can’t really get much better than having all of these fresh fruits and vegetables in season and ready to eat! Pop on over to your local farmer’s market and I bet you’ll find grapefruit, kale, and a bunch of other delicious fresh produce items, ready for your salad making magic!
