In Season Eats – Starring Mr. Carrot

We all know that the pumpkin is the shining star in October! As soon as we hit October 1st, it’s all about #PUMPKINEVERYTHING! But hold your horses folks, what about that other delicious orange root plant, Mr. Carrot??

Did you know that carrots are harvested and are at their prime in October? YES! YES! YES, they are! Carrots also have tons of health benefits too! They are packed with antioxidants like beta-carotene, and contain high amounts of dietary fiber, vitamins A, B, & C, and not to mention all of the iron and potassium!

With all the crazy good benefits you get from carrots, they’re a great source of energy to fuel your workouts! Also, because carrots are so versatile, they go well with both sweet and savory dishes and used in both desserts and side dishes too! Short on ideas? Carrot Cake Energy Balls
Carrot Cake Energy Balls

Carrot Cake Energy Balls

Ingredients

  • ½ Cup Carrots, shredded
  • ½ Cup Oat Flour (or Oats)
  • ¼ tsp Allspice
  • ¼ tsp Ground Cloves
  • ¼ tsp Nutmeg
  • ¼ tsp Cinnamon
  • ¼ Cup Water
  • 1 TBS Almond Butter (Creamy Raw is best)
  • 6 Medjool Dates
  • 1 tsp Vanilla Extract
  • 1/8 Cup Almond Flour or Almond Meal (Optional Garnish)

Instructions

Pour almond flour or almond meal in a shallow dish, set aside.

Combine oat flour (or oats) with shredded carrot in food processor and blend until very light flour consistency. Next, add in spices and blend.

Add water, almond butter, dates, and vanilla extract in a little bit at a time and blend until all ingredients are well mixed and very sticky, thick consistency.

Using a tablespoon, scoop mixture and roll into balls. (Wetting your hands with water first will help the dough not stick to your hands).

Roll each ball in almond flour and place balls on plate, cookie sheet, or plastic container and place in refrigerator for at least 2 hours. Enjoy!

Honey Roasted Carrots

Honey Roasted Carrots

Ingredients

  • 1 LB Carrots, cut diagonally, and halved.
  • 2 tsp Olive Oil
  • ½ TBS Honey
  • 1 TBS Cinnamon
  • Pink Himalayan Sea Salt, to taste

Instructions

Preheat oven to 450 degrees F.

Combine chopped carrots and olive oil in container or Ziploc bag and mix until carrots are well coated. Place carrots on baking sheet and cook for 30 minutes, flipping halfway through.

Remove from oven and toss carrots with honey, cinnamon, and pinch of salt for taste. Enjoy!


 

Because carrots can be used in so many different ways and complement so many types of dishes, you won’t feel bad buying the entire bag! They stay good for a pretty long time in the refrigerator and there are a ton of different ways to incorporate them in your weekly meal.

The possibilities are endless here folks! You can roast them and mix them in with other root vegetables for an incredible vegetable medley, you can shave and add as a topping on your favorite salad, or you could even make a deliciously decadent carrot cake with cream cheese frosting!  Enjoy!
