Honey Sunflower Butter Balls
These Honey Sunflower butter balls are quite a tasty treat. Sweetened ever so slightly and dipped into dark chocolate! These Make a fantastic party pleaser!
1 1/2 c sunflower seeds
2 scoops vanilla About Time VE (you can use whey isolate too)(do not pack scoop tightly)
3 T honey
2 T unsweetened Almond Milk
1 1/2 T coconut oil
1 1/2 t cinnamon
1 t vanilla extract
1/2 t salt
7 squares dark chocolate- I used Traders Joes, Pound Plus 72% chocolate. I had some chocolate left over too
Just melt this in a small metal bowl over a small sauce pot of water on low heat
These cookies are a no bake cookies. Place Sunflowers seeds into a food processor and blend until they stick to the wall of the bowl. Scrape down and add the coconut oil, vanilla extract, cinnamon and salt. Blend until product is smooth. You may need to scrape a few times. Place mixture into a medium size mixing bowl and add the vanilla protein. Knead by hand until incorporated. Add the honey and knead in. Add the almond milk to bring mixture together. Using a small cookie scoop, scoop batter, form into a ball, and place on a small cookie sheet lined with wax paper or parchment paper. Once all dough is scooped place balls into the refrigerator for 25 minutes to chill. During the last 5 minutes of chilling get your sauce pot with some water and put over low heat. add the small metal mixing bowl to the top, add the squares of chocolate so they start to melt. Remove cookie balls from the refrigerator and place a toothpick in each cookie. Once chocolate is melted and stirred, turn off heat and quickly dip each cookie in and place back onto the wax paper. Once all are finished place into the refrigerator to solidify the chocolate. Remove when done and enjoy!
