Homemade Protein Bread

This Homemade Protein Bread is a fantastic recipe! Great for spreads like apple or pumpkin butter, sandwiches, toast, grilled cheese and PB&J’s. Try something new too!

Homemade Protein Bread

 

1 package yeast

1 c warm water (about 110 degrees)

2 T honey

Place yeast in the bowl, Add the warm water and mix. Add the honey and mix. Allow yeast to sit for about 8 minutes. It will get foamy. This is how you know the yeast is alive and working. If your water is too hot it will kill the yeast, Just FYI

While this is happening, preheat your oven to the lowest temp- 175 or 200 degrees.

In a medium mixing bowl place:

3 scoops About Time Unflavored whey protein isolate

1/3 c coconut flour

1/3 c millet flour

1/3 c quick oats

2 T golden flax

1 t salt

1 t baking powder

1/2 t baking soda

Mix well.

Add to the dry mix:

2/3 c pumpkin puree

1/3 c melted coconut oil- melt then measure out

Mix well. Add the yeast mixture, fold in.

Spray a bread pan well with non stick spray. place the batter in the pan. if you want you can put garnishes on top of your loaf. I used a little sunflower seeds, brown flax meal and some quick oats. Just sprinkle over the top. Then cover with a clean towel and raise 1 hour in the oven.

When done, remove pan from over, move temperature to 350 degrees.

once heated place in bread and cook for 40 minutes. Turn halfway between cooking time. When done remove from the oven and cool on a rack till warm. remove from pan and allow to cool completely or to the temperature you want. Slice and enjoy

 

TIP* I will be trying this recipe a few different ways using greek yogurt, water, almond milk to see if it comes out even lighter

1 loaf yields 12 slices- 1 slice is a serving

one serving equivalent to:

Carbs Fats Protein
1.0 1.0 1.0
