Delicious Green Tea Cupcakes with Coconut Frosting made with All Natural About Time Whey protein
3 scoops About Time Birthday Cake protein
3/4 c almond meal
1/4 c flax meal
1/4 c coconut flour
3 packets Stevia

1t baking powder

1/2 t salt

1/4 t ginger
1/2 t nutmeg

Mix together in bowl

heat 2 c unsweetened almond milk with 4 green tea, tea bags to steep for flavor, cool slightly ( if a bag breaks, no biggie, the tea adds flavor)

add to almond milk:

1 T olivio coconut spread ( or some type of butter)

1 T vanilla extract

1/2 c pumpkin

 

Mix wet into dry

 

Preheat oven to 350 degrees. line 14 muffin tins. Spray cupcake liners with non stick spray. Scoop in batter to 2/3rds full. Bake 17-18 minutes. cool

Coconut frosting:

1 1/2 c unsweetened coconut

1 T olive oil

1 t vanilla extract

2 scoops About Time Birthday Cake protein

Add coconut to food processor. Begin to blend until it begins to stick to side walls. Scrape down, add olive oil. Blend for a minute. add vanilla and 2 scoops protein, blend until mostly smooth. frost cooled cupcakes. Yields 14 cupcakes
