A great way to start your day — let breakfast be as tasty as possible with these Flax Seed Muffins!!!
1 cup flax seed meal- (ground flax)
1/2 c About Time Cinnamon swirl protein
2 teaspoons baking powder
1 1/2 Tablespoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
3/4 c Truvia or Stevia equivalent
4 large eggs, beaten
3/4 greek plain yogurt
1 Tablespoon vanilla
1 medium apple, chopped fairly finely
1/3 cup chopped pecans (optional)
Preheat oven to 350 F. line a 12 muffin tin pan with cupcake liners. gently spray with non stick spray.
1. Saute apples for 3 to 4 minutes to soften. set aside
2.. Mix the dry ingredients together, then add the rest of them.
3.. Let batter stand 10 minutes, then put into the muffin pan and bake for about 16 minutes until toothpick comes out clean and muffins just barely start to pull away from the sides of the tin.
