Fig Newtons
These Fig Newtons are quite good. Protein packed and a much healthier version than in a regular grocery store
Crust:
1/2 c oat flour
1/4 c almond flour
1/4 c cashew flour
2 T coconut oil or coconut spread. (i think a butter type would be better)
2 T water
1 scoop About Time Cinnamon Swirl whey protein isolate
1/4 t salt
1/4 t baking powder
Filling:
6 dried figs
1 T date molasses
Preheat your oven to 325 degrees. spray a light colored tray with non stick spray.
Place all items for the crust into a food processor, blend until they come together.
Place dough on a piece of wax paper, divide it in half.
Roll out dough to about an 6-8 in circle. About 1/4 inch thick.
Place filling in the food processor and blend. Spread filling over the dough.
Roll out other half of dough to be the same size as the first. Top the filling with the second piece of sough and pinch edges just a bit.
Cut into shapes and place cookies on the baking sheet. Bake on your middle rack in oven for 8 minutes. remove and cool. Enjoy
