Coconut Macaroon Recipe
Coconut Macaroon Recipe with no guilt but all the taste and texture you would expect from this cookie. Try different flavors of protein for more variations. Maybe try using chocolate or banana About Time whey protein isolate.
1 1/2 c unsweetened coconut flakes
1/2 c almond meal
1 scoop About Time Birthday Cake whey protein isolate
3 T coconut oil
2 T plain Greek yogurt
1/2 T vanilla extract
3 packets Stevia
1/2 t cinnamon
1/4 t salt
Preheat your oven to 350 degrees. Gently spray a light colored baking sheet with non stick spray. Place all dry ingredients into a medium sixe mixing bowl and blend together well. Add the coconut oil and blend this in with your hands. Repeat this process with the Greek yogurt. Using a cookie scoop, press firmly into batter to fill scoop evenly and drop dollops onto your baking sheet. (The recipe yields 20 cookies). Place tray into oven and bake for 6 minutes (maybe 7 but no more). Your macaroons will be golden brown on both top and bottom. Remove from oven and baking sheet immediately and place on a wire rack to cool. This recipe is simple and quick if you need to make something in a hurry. The macaroons are quite a show stopper too for any occasion.
