Coconut Granola Muffins
These Coconut Granola Muffins are AMAZING! Great for breakfast, middle of the day snack or topped with a little peanut butter for an after dinner snack!

the base of this recipe was derived from the left overs of that recipe:
Preheat your oven to 350 degrees.
In a medium mixing bowl place the left over coconut and flax mixture from the apple fries, add
1 t salt
1 1/2 t baking powder
1 T cinnamon
1 T stevia
2 T vanilla extract
2 T chia seeds
3 T sesame seeds
1/4 c coconut flour
1/4 c millet flour
1/4 c sliced roasted almonds
1/4 c melted coconut oil
2/3 c dried cranberries
2 scoops About Time Pumpkin Spice whey protein isolate
2 c unsweetened almond milk
Add all items into the bowl and mix well. Batter should look like a muffin/cake batter consistency. Scoop into muffin tins that are lined and lightly sprayed with non stick spray.
I used a #12 scooper to make BIG muffins, i got 10 muffins from this recipe. Bake for 16-18 minutes or until toothpick comes out almost clean, carry over cooking will finish these off
