Coconut Date Good Morning Muffins

1 c pumpkin

1/2 c quick oats

2 T flax meal

2 scoops About Time Vanilla whey isolate

1/3 c unsweetened Almond coconut milk

3 T unsweetened coconut

1 T vanilla extract

1/2 T Chia- soaked for 5 mins- drained

1/8 c raisins

3 dates chopped

1 T honey

2 t cinnamon

1 t fresh ginger minced

1/2 t baking powder

1/16 t salt

 

Preheat oven to 325 degrees. Mix together in a small bowl- oats, flax meal, protein, 1 T coconut, baking powder, raisins, dates, salt, and cinnamon. In a larger bowl mix together the pumpkin, vanilla extract, unsweetened almond coconut milk, ginger, honey and chia seeds. Add dry to the wet and fold together until incorporated. Line 8 muffin tins and gently spray with non stick spray, scoop out batter to fill 8 liners, Garnish top of muffins with remaining 2 T coconut. Bake for 28 minutes turning tray half way in between
