Cinnamon Rolls
Protein cinnamon rolls- YES!!! Curb that sweet tooth with these for breakfast!
for the dough:
1/2 c pumpkin
1/2 c About Time cinnamon swirl protein
1/4 c almond meal
1/4 c quick oats
1/4 unsweetened almond milk
1 T vanilla extract
1 tsp cinnamon
1 tsp baking soda
1 packet stevia
Preheat oven to 390 degrees. Mix dry ingredients together in a bowl. Mix wet ingredients in another bowl. add dry to wet and blend together. pour into a 11 x 7 x 1 1/2 brownie pan that is sprayed with non stick spray. Bake for 10 minutes. remove from pan and cool on a wire rack
Frosting:
6 oz plain Greek yogurt
1/2 c About Time Birthday cake protein
1 T maple syrup
1 T vanilla extract
1/2 packet stevia
Mix all items together and set aside
topping:
Pecan meal- (chopped pecans)
cinnamon
some of the frosting above
trim edges off of dough. Cut in half lengthwise to make 2 large flat squares of dough- (same size of the pan we cooked in)
cut 5 long strips from each piece of dough
frost each strip- do not overload
sprinkle each strip with cinnamon. i did a light dusting
roll each strip up. this will represent a cinnamon roll
top each roll with a little dollop of frosting and a sprinkle of pecan meal.
*TIP- an egg or egg white would help in the sponge cake in this recipe- due to my sever allergy I can NOT be around them.
enjoy- yields 10 mini cinnamon rolls
