Chocolate Peanut Butter Coconut Cake

1 1/2 c Bob’s red mill low carb flour

2/3 c miller flour

2/3 c carob flour

3 scoops About Time birthday cake

1 T cinnamon

1 t salt

1 t baking powder

12 stevia packets


1 can coconut milk- light

2/3 c coconut oil- melt then measure

1/2 c honey

1/2 c applesauce

1/2 c nut butter

2 T vanilla extract


5 squares Trader Joe’s dark chocolate pound plus- shredded

Preheat oven to 350 degrees. Spray a 9 x 13 pan well with non stick spray.

Mix together the first 8 ingredients. In a separate bowl mix together the next 6 ingredients. add the wet ingredients to the dry ingredients. fold in the chocolate then pour batter into the pan.


Bake 26-28 minutes. Cool completely


5 squares Trader Joe’s Chocolate Pound Plus

1/2 c nut butter

Melt chocolate over a water bath. remove from heat. Add the nut butter and blend well. Spread over cake when cool. garnish cake if you like
