Chicken Meatballs


4 chicken breasts- ground around 24 oz

1 c almond meal

2 scallions-chop in food processor

1  carrot- slice- chop in food processor

1/4 large red pepper- slice- chop in food processor

2 T soy sauce

1/2 t seasoned salt

1 t garlic powder

non stick spray

preheat oven to 375 degrees. Mix all items together in a bowl. Either scoop onto a sprayed cookie sheet or scoop and roll into meatball form and place on a cookie sheet. recipe yields 20 meat balls. I served these with a spicy mustard sauce. 2 oz Greek yogurt plain, 2T spicy Mustard, 1/2 t red pepper flakes. this sauce is about 40 calories, 2 carbs, 6 g protein, 0 fat
