Chicken Club with Sweet Potato Dressing
This Chicken Club with Sweet Potato Dressing is an amazing lunch or the filling as a dip with vegetables. Try any type of items inside the salad to change the taste and texture to what your in the mood for.
Dressing:
1/3 c sweet potato puree ( can use pumpkin too)
2 T Dijon mustard
2 T molasses
1 T jalapeno juice
1 t caper Juice
1 t red wine vinegar
1/2 t onion powder
1/2 t fresh minced garlic
6 shakes of Worcestershire sauce
a few dashes of salt and pepper
a dash or 2 of cayenne pepper
In a small bowl mix the sweet potato puree and the protein, blend well. Add the remaining ingredients, Mix until combined. Set aside
Chicken salad mix:
2- 6 oz chicken breasts- cooked, sliced
i used:
1/4 c celery, diced
1/4 c cranberries, dried
1/4 c walnuts, chopped
Place chicken in the food processor and pulse to get a coarse grind, place chicken in a medium bowl. Add the remaining ingredients and toss. Pour dressing on top of chicken mixture, fold together. Set in the refrigerator until well chilled
yields 4 servings
Toast 1 slice P28 bread. Cut into 3 triangles, (i threw the center piece away). Take a slice of bread, top with mixture, repeat until done. Place a wooden hors D’oeuvres fork into it. Slice a pickle or choose a garnish. enjoy
