These Caramel Pecan Cookies are quick and easy top make. Their taste is rich and the cookie is crunchy on the outside and soft in the center. A real delight with a coffee or cappuccino.
1/3 c coconut flour
1/2 c unsweetened coconut
1 scoop About Time vanilla whey isolate
1/4 c pecan pieces
3 T date molasses
2 T water
1 t pure vanilla extract
1/8 t baking powder
Preheat your oven to 350 degrees. Spray a light colored baking sheet well with non stick spray.
In your food processor place the coconut. Blend until soft and starting to cream. Add date molasses, blend for 15-30 seconds. Add the remaining ingredients except for the pecans. Blend until mixture comes together.
Place mixture into a medium sized bowl, add pecans and fold in with your hand. I made 8 cookies with this dough. I just took some dough in my hand, rolled it, pressed between my palms and placed on the cookie sheet.
Bake for 8 minutes, remove and cool
TIP*- date molasses can be found in a middle eastern store or you can make it by blending dates and water
