These Breakfast Scones are quite a delight for the individual trying to eat healthier but wanting to indulge just a little. This recipe is made with many really good ingredients for a slow digesting breakfast pastry.

Breakfast Scones

 

1 c quinoa flour

1 c plain Greek yogurt

1 c pumpkin

2/3 c quick oats

2/3 c coconut flour

2/3 c cranberries- dried or any type dried fruit or fresh berry in season

2/3 c unsweetened coconut (split in half) or some kind of nut

4 scoops About Time Birthday Cake whey protein isolate,

1/2 c coconut oil- measure after melting

1 large orange, zest and juice, can use a different fruit and zest to pair with the dried fruit of your choice

1 T baking powder

1 T cinnamon

1 T vanilla extract

10 Stevia packets

1 t baking soda

1 t salt

Preheat your oven to 350 degrees. Spray a baking sheet well with non stick spray, set aside.

In a large bowl add the Millet flour, oats, coconut flour, protein, 1/3 c of the coconut, baking powder, baking soda, salt, cinnamon, stevia. Mix well. Add the cranberries and fold in. In a separate bowl mix together yogurt, pumpkin, vanilla extract orange juice and zest. Pour the liquid mixture into the dry, mix well. add the melted coconut oil and fold in.

Place a piece of wax paper on your counter top. dump the batter onto the wax paper and pat it out into an oval about 3 inches high. and even across the top. Sprinkle the top with the remaining 1/3 c coconut and press down slightly.

using a butter knife cut the dough on the corner at an angle making a triangle shape (isosceles). Place each one on your sprayed baking sheet. work your way around the dough cutting out your scones. This batter made me 15 large breakfast scones.

Once completed, place your tray into the oven and bake for 20 minutes, turning halfway through. Remove from oven and cool. Enjoy

TIP*- ovens vary check at 18 minutes to see if they are done. You can switch up the fillers and toppings. try using frozen blueberries and spiced pecans or raisins and walnuts. Use different protein flavors too for a different flavor
