Blondie Brownies
A great way to end you day. These Blondie Brownies are a tasty dessert especially when they are just slightly warm and the chocolate is all gooey! YUM!
1 1/2 c unsweetened almond milk or coconut milk
1 c quick oats
1/2 c coconut flour
1/2 c chocolate chips (i used ENJOY vegan chocolate chips)
2 scoops About Time whey protein isolate, vanilla or birthday cake
1/3 c coconut oil- not melted
1/4 c pumpkin
1 T plus 1 t Stevia (you can buy this from vitacost.com)
1 T golden flax meal
1 T pure vanilla extract
1/2 t each baking powder, baking soda and salt
Preheat your oven to 350 degrees. In a medium mixing bowl add the oats, coconut flour, protein, stevia, salt, baking powder and soda, flax meal. Mix well
in a small bowl add the pumpkin, vanilla extract, mix well.
Add un-melted coconut to the oat mixture and using a pastry knife blend oil into the mixture until completely worked in. Fold in the pumpkin mixture to the oat mixture. add the unsweetened almond milk and mix well. Fold in chocolate chips.
Spray an 8×8 pan with non stick spray, spread batter evenly into the pan. bake 20-15 minutes until toothpick comes out almost clean. cool until just warm. Cut and enjoy.
