Banana Pudding
2 types, 1 raw, 1 cooked
RAW:
In a bowl
mash 1/4 of a small banana
add 1 packet Stevia
1/2 scoop About Time banana whey isolate
1 t vanilla extract
1 t honey
dash cinnamon
a few dashes of salt
1 T coconut flour
1 T unsweetened almond milk
4 T Greek yogurt
1/4 t xanthan gum
Mix well.
gently mash remaining 1/4 of banana in your finger tips and fold into mixture. Place in refrigerator for 20-30 minutes

COOKED:
1/2 c unsweetened almond milk
1 t honey
a few dashes of salt
1 stevia packet
1 t vanilla extract
place into a small sauce pot over low-medium heat for 1-2 minutes
ADD:
2 egg yolks
Stir continuously until mixture thickens over low heat. remove from heat and add 1/4 banana and mash into the mixture. Add 1/2 scoop of About Time banana whey protein and a dash of cinnamon
pour into a bowl, place saran wrap on top of pudding so it is touching. this will not let that “skin” form. place in refrigerator until cooled
slice 1/4 of banana and fold in cooled mixture, serve
