These Banana Almond Butter Upside Down Muffins are a great dessert served warm with a homemade vanilla protein ice cream made from almond milk or simply for breakfast

Banana Almond Butter Upside Down Muffins

 

1 large banana cut into 24 slices

honey

2 tart pans

Place a drop of honey in each tart pan, top with a slice of banana

Preheat oven to 350 degrees, once heated place 2 trays with honey and bananas into the oven for 10-12 minutes

 

During this cooking, Mix together:

3 small bananas, mashed

1 c quick oats

1/2 c unsweetened coconut

1/2 c crushed walnuts

1/2 c unsweetened almond milk

1/4 c Almond Butter

3 T instant coffee

2 T flax meal

1 T cinnamon

1 T rum extract or almond or vanilla

1 t salt

3 packets Stevia

Once blended well, using a small cookie scoop; top each baked banana slice with batter. When completed bake for an additional 11-12 minutes. Remove, cool until just warm. Turn tray over on wax paper to remove mini muffins. If serving warm, serve before they get too cool
