Apple Pie with Protein Crust

This Apple Pie with Protein Crust is a great dessert to impress your family or to treat some guests.

Apple Pie with Protein crust

 

CRUST:

1/2 c almond flour

1/2 c cashew flour

2 scoops About Time cinnamon swirl whey protein isolate

1/2 c coconut oil

1/4 c coconut flour

1/4 c Olivio brand coconut spread

2 T golden flax meal

2 T water

1/8 t salt

 

Preheat your oven to 375 degrees.

In a large mixing bowl, Place all item except, Coconut oil, coconut spread and water. Mix well. Add coconut oil and coconut spread, blend in with a pastry blender until all of it is worked in. Add the 2 T water and knead by hand to make your dough. Place in the fridge for 5-10 minutes. remove, cut dough in half. Place 1/2 back in fridge, roll out the other half between 2 pieces of wax paper.

Place 8 in round pan on top of dough and flip over into the pan. Fix dough as needed.

 

FILLING:

3 apples- medium

1 pear

1/2 c applesauce

1/4 c raisins

1/4 c unsweetened coconut

2 t cinnamon

3 packets Stevia

1/8 t salt

Peel apples and pear- (reserve skins if you want to make apple chips)

Add remaining items and toss until blended. Place filling into the rolled out dough. Place into preheated oven for 15 minutes

When you have 2 minutes left before you remove pie, pull out other 1/2 of dough, roll out. I cut mine into heart shapes with a cookie cutter.

Remove pie from oven, top with your shapes, place back into oven for another 15 minutes. Remove from oven and cool.

 

TIP* you can add more applesauce to have a creamier filling
