Apple Fries with Coconut

These Apple fries with Coconut are simply AMAZING! A healthy snack for kids and adults to share together. Try dipping them into applesauce or homemade caramel

Apple Fries with Coconut

 

2 apples

2 T lemon juice

2 T honey

1 t cinnamon

1/2 t allspice

dash of salt

1 c unsweetened coconut

1/3 c flax meal (dark or golden)

 

Preheat your oven to 425 degrees. place empty non sprayed baking sheet in the preheated oven until while you prepare the apples.

Place coconut and flax meal into a large mixing bowl, set aside. Cut apple slices 1/2 inch thick, then cut into fry shape rectangles. Toss fries gently into the lemon juice, drain any excess liquid away. Sprinkle with dash of salt, cinnamon and allspice. Toss to coat. Drizzle the 2 T honey on the fries and toss to coat. add a few fries at a time to the coconut mixture tossing so the fries get coated. Keep doing this until all the dries are in the coconut mixture and coated.

remove pan from oven, spray with non stick spray. place apples (skin side down for most of them) on the tray. bake about 8 minutes turning halfway through. just until coconut starts to brown. Remove and cool for a few minutes. Enjoy.

 

Keep in mind if you over cook them the apples will get too soft
