Almond Date Cut Out Cookies
These Almond Date Cut Out Cookies are so good, they taste just like Nabisco’s Teddy Grahams. Now if that interests you, give this healthier recipe a try!
1 1/2 c almond butter
1/2 c date paste
1/3 c honey
1 scoop About Time Birthday Cake whey protein isolate
2 T coconut flour
1 t cinnamon
1 t baking powder
1/2 t baking soda
1/4 t salt
2 stevia packets
Preheat your oven to 350 degrees. Spray 2 baking sheets with non stick spray.
In a medium bowl place the almond butter and honey, mix well. Add the date paste and mix in well. In another bowl add the remaining ingredients mix to incorporate. Add the dry ingredients to the almond butter mix, using a fork begin to fold together. You may need to use your hand to blend the dough into a ball. Place dough on wax paper and roll out about 1/2 inch thick. Cut out cookies with cookie cutter shapes of your choice. place 40 cookies on each tray. Bake for 7-8 minutes. remove from the oven and cool for a few minutes on the tray on a cooling rack. Remove cookies from tray and finish cooling on the rack
My cutters are small to make bite size cookies (or poppers for a better name- you can just pop it into your mouth) I made 80 cookies out of this recipe
I made this recipe again but I used a scant scoop of chocolate protein instead of birthday cake and added 1 T carob powder plus i reduced the coconut flour to 1 T. I scooped these out with a cookie scoop and made 34 cookies. Pressed them with a fork and baked at 350 for 10-11 minutes. These were great dunked into coffee!
