Almond Butter Bars or Bites

The Almond Butter Bars or Bites are quick and easy to make. Sweetened with honey and loaded in protein these little snacks or breakfast bars are addicting!!

2 c almonds

4 scoops About Time Vanilla or birthday cake protein

1/3 c cashews- or any other nut or seed

1/3 c honey plus 1 T

1 T cinnamon

1 T coconut oil

1/2 t (a scant half teaspoon) Salt- omit if you are using salted nuts

Place Almonds and other nut or seed into the food processor. Begin to grind up into a flour. Add the coconut oil, cinnamon and salt. Blend until the mixture forms a ball. Place the dough ball into a stainless steel mixing bowl. Add the 4 scoops of whey isolate. Work the isolate into the mixture by kneading it into the dough. Once all the protein is worked in, place the dough onto a wax paper lined cookie sheet. Use a rolling pin to spread out the mixture to your desired thickness. I did mine at about 1/2 inch. I then cut the bars/Bites and flipped the wax paper over and placed bars onto a wire rack. Place into the refrigerator for 5-10 minutes to chill the coconut oil. It heats up and melts well from the kneading. Remove and enjoy! This recipe will yield 12 bars or 48 bites
