4 Healthy Easter Breakfast Recipes
Just like any other holiday, it can be tricky to stay on track and eat healthy when there are so many brunches and dinners to attend. Especially on a busy holiday morning, selecting a healthy meal for home or to take to a gathering can be difficult to put together. We put together 4 small simple recipes for you to make at home Easter morning, or to take with you to a brunch.

Waffles

 

This is a fun and easy breakfast that the whole family can make together! Using these simple ingredients, make health yummy waffles in under 10 minutes!
 Ingredients:
  • 1 C AboutTime Maple Syrup Pancake Mix (or your favorite flavor)
  • 1/2 c mashed sweet potato
  • Optional: berries or your favorite choice of toppings
Directions:
1.Mix the two items together.
  1. Spray your waffle maker well with your choice of non-cooking spray or oil, place in batter and spread.
  2. Close the lid, bake about 3 minutes or until waffle is cooked.
  3. Top with your favorite berries, dried nuts, almond butter, etc.

 

Egg Muffins

 These little egg cups are a delicious little light breakfast to hold you over until lunch or dinner, and they’re also a pretty clever idea to take to a brunch.

Ingredients:

  • 4 egg whites
  • 4 whole eggs
  • 1 cup spinach, chopped
  • 1/2 cup red pepper, minced
  • 1/2  cup mushrooms, minced
  • 2 garlic gloves, minced
  • 1 cup chopped ham (optional)
  • 1/2 cup shredded mozzeralla cheese
  • 2 tbsp fresh chives, minced
  • 1/2 tomato, minced
  • Coconut oil or olive oil
Directions: 
  • Preheat the oven 350 F
  •  Grease a skillet with your choice of olive or coconut oil
  •  Add the red pepper & mushrooms and cook until soft. 2-3 minutes
  • Add the spinach, garlic, and season to your liking. Allow to cook for another minute then set everything aside.
  • In a bowl, whisk the whole eggs and white eggs and season with salt and pepper
  • Fill each muffin tin with a layer of cooked vegetables then top with the beaten egg mixture
  • Place in oven and bake for 15 to 18 minutes, or until eggs are set
  • Serve the egg muffins with topped chives and freshly diced tomatoes, or your choice of toppings.

Vegan Brownie Muffins

These are like dessert for breakfast! Can’t go wrong starting your day with a  brownie muffin! Plus, your guests won’t even know they’re healthy!
Ingredients:
  • 1 c AboutTime Vegan Brownie Mix
  • 1 medium mashed banana
  • Optional: fresh fruit, dried nuts, dark chocolate chips
Directions:
  1. Mix the two items together.
  2. Scoop into lined and sprayed muffin tins.
  3. Bake at 325 degrees for 12 to 14 minutes.
  4. Add any toppings you may like.

 

Fruit Pizza

This is my favorite “pizza” to take to a brunch, not only is it adorable, but a healthy snack everyone will love.
Ingredients:
  • 1 seedless watermelon
  • 1 cup blackberries
  • ½ cup blueberries
  • 2 kiwis, peeled and sliced
  • 2 oranges, peeled and sliced
Directions
  1. Slice up your watermelon into round, circle slices.
  2. Top the watermelon with (Feel free to add whatever fruits you’d like or what is in season)
  3. This is fast and easy to make, so it can be put together right before serving.
  4. Optional: Sprinkled dried coconut on top to look like the “Cheese” on the pizza
